- 3/4 lb cheese tortellini 350g
- 2 cans chunk light tuna in oil, drained 170 g/6 oz each
- 3 cups baby spinach 750ml
- 1 red bell pepper, roasted, peeled and cut into strips
- 1/2 cup Parmigiano-Reggiano cheese shavings 125ml
- 1/4cup olive oil 60ml
- 2tbsp lemon juice 30ml
