Chickpea Caesar Salad from Vegan(ish) by Jack Monroe

Ingredients

• 1 thick slice of bread
• A dash of lemon juice
• 2 cloves of garlic, peeled and minced
• Oil, for brushing
• 1 × 400 g tin of chickpeas
• 1 × 400 g tin of jackfruit in brine or water – I like Summer Pride
• 1 tbsp light cooking oil
• Salt and black pepper
• ½ tsp Dijon mustard
• 2 tsp dried mixed herbs
• 2 tbsp Vegan Mayo
• 1 head of lettuce – cos works well
• 1 tsp nutritional yeast flakes
