Ingredients

• 1 pack of Scotty Brand Lentil Soup Mix
• 1.5 kg Scotty Brand Potatoes, peeled.
• 4 carrots peeled and sliced.
• 1 onion freshly chopped.
• 3 cloves garlic, minced.
• 2 litres vegetable broth.
• 1 can (400g) diced tomatoes, undrained.
• 2 teaspoons ground cumin
• 1 teaspoon ground coriander
• 1 teaspoon smoked paprika
• 1 bay leaf
• Salt and black pepper to taste
• 100g of kale or spinach, chopped
• Fresh parsley. Chopped for garnish
