White Bean Stew with Parsnips & Bacon - Dishing Up the Dirt

Ingredients

• 8 ounces Navy beans, soaked overnight
• 4 slices thick cut bacon, chopped
• 1 yellow onion, finely chopped
• 2 parsnips, finely chopped (about 1 cup)
• 4 cloves of garlic, minced
• 1 teaspoon dried thyme
• 1 teaspoon dried rosemary
• 2 bay leaves
• salt and pepper to taste
• 4 1/2-5 cups bone broth (or low sodium chicken stock)
