Stashcook | Chicken & White Bean Stew

Ingredients

• 8 pieces skin-on, bone-in chicken thighs
• 1 large yellow onion
• 1 green bell pepper
• 3 garlic cloves
• 1 tsp smoked paprika
• 3 sprigs thyme
• 2 tbsp tomato paste
• 1 (200 ml) glass of white wine
• 2 x (400 g) cans of diced tomatoes
• 2 x (400 g) cans of Great Northern beans
• 1 (200 g) jar of pitted Kalamata olives
• 1 tbsp white wine vinegar
• 1 (20 g) bunch of fresh basil
• 2 tbsp extra virgin olive oil
• 1 loaf of sourdough bread, for serving
