• 12 La Tortillería corn tortillas
• 600 g free range chicken breast or thighs boneless
• 1 onion
• 3 bay leaves
• 4 garlic cloves
• 3 fresh thyme
• 1 tin tomatillos 820g
• 3 long green chillies
• 2 poblano chillies
• 1/2 bunch coriander
• 150 ml oil
• 300 ml sour cream
• 100 g Oaxaca shredded cheese
• 150 g Tasty cheese sliced
• 1 tbsp sesame seeds toasted
• Sea salt flakes & pepper to taste
