Ingredients

• 1/4 cup all-purpose flour
• 3/4 salt
• 1/2 tsp salt
• 1/2 tsp baking powder
• 6 eggs
• 2 tbsp unsalted butter, melted and cooled
• 1 cup cottage cheese
• 2 cups shredded Monterey Jack cheese
• 4 medium poblano chiles, roasted, peeled, seeded and cut into 1/2-inch dice
