• 1 envelope (1/4 ounce) active dry yeast
• 1 cup milk
• 6 tablespoons unsalted butter, plus more, melted, for brushing
• 1/2 cup sugar
• 1 tablespoon plus 1 teaspoon coarse salt
• 1 teaspoon ground cardamom
• 2 cups mashed cooked peeled sweet potatoes (from about 2 medium)
• 1 teaspoon fresh lemon juice
• 1 large egg, lightly beaten
• 7 cups sifted all-purpose flour
