  • 1 medium yellow or white onion, diced (about 1 cup)
  • 4 medium celery ribs, diced (about 1 cup)
  • 1⁄2 medium red bell pepper, cored, seeded, and diced (about 1⁄3 cup)
  • 1 large red globe, beefsteak, or heirloom tomato, chopped (about 3⁄4 cup)
  • 1 tablespoon minced garlic
  • 3 1⁄2 cups cooked black beans plus 2 cups cooking liquid
  • 2 cups vegetable broth
  • 1 tablespoon finely grated orange zest
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 1⁄2 teaspoons celery seeds
  • 1⁄2 teaspoon ground allspice
  • 1⁄2 teaspoon ground cloves
  • 1⁄2 teaspoon ground cinnamon
  • 1⁄2 teaspoon salt
