Spanish white bean stew with chorizo sausage

Ingredients

• 1 carrot, chopped
• 3 tablespoons olive oil
• 1/2 cup chopped parsley (you can also use celery
• 1 can 14oz/400grams diced tomatoes
• 14 oz dried white beans
• 1 red bell pepper, chopped
• 1 teaspoon sweet paprika
• 9 oz soft chorizo sausage, sliced
• Salt and pepper to taste
• 1 onion, chopped
• 1 green bell pepper, chopped
• 2 teaspoons dried thyme
• 1 cup chicken stock or vegetable stock or water
