Ingredients

  • 800g of rolled shin of beef, deboned
  • 100g of salt
  • 1l water
  • fresh herbs, a mixture of thyme, bay leaves, rosemary and sage
  • vegetable oil
  • 2 carrots, cut into rounds
  • 2 brown onions, roughly chopped
  • 1 bulb of garlic, split
  • 30g of plain flour
  • 500ml of red wine
  • 2l beef stock, or bone broth
  • 6 sprigs of thyme
  • 10 peppercorns
  • 4 bay leaves
  • 200g of sourdough breadcrumbs
  • 50g of yeast flakes
  • 100g of bone marrow
  • 20g of parsley leaves, finely chopped
  • 10g of tarragon leaves, finely chopped
  • chopped chives
  • butter, for cooking
  • 1 January King cabbage, shredded
  • 100g of water
  • 200g of salted butter, chilled and diced
  • 1/2 bunch of chervil leaves, picked from the stems
  • 5 tarragon leaves, thinly sliced
  • 10g of parsley leaves, thinly sliced
