• 600g chuck steak, trimmed and cut into 3cm pieces
• Sea-salt flakes and freshly ground black pepper, to season
• 1 brown onion, finely chopped
• 2 cloves garlic, crushed
• 500g Swiss brown mushrooms, thinly sliced
• 2 tsp tomato paste
• 2 Tbsp Worcestershire sauce
• 1 tsp smoked paprika, plus extra, to serve
• 1 Tbsp Dijon mustard
• 1 litre beef stock
• 1 small sprig bay leaves
• 2 cups water
• 300ml sour cream
• 200g pappardelle pasta
• Flat-leaf parsley sprigs, to serve
