• 250g of baby leeks, trimmed
• 250g of asparagus, trimmed to the same length as the leeks
• 1 garlic clove, finely chopped
• 100g of peas, fresh or frozen
• 150g of mascarpone
• 25g of tarragon, finely chopped
• 25g of flat-leaf parsley, finely chopped
• 1/2 lemon
• 50g of butter
• 1 egg, beaten for glazing
• plain flour, for dusting
