Citrus Celery Root Stew - Veganuary

Ingredients

• 1 whole celery root (celeriac), peeled, halved and sliced thin
• 1 onion, peeled and sliced
• A little olive oil
• 2 carrots, peeled and sliced
• 2 celery stalks (preferably with leaves), diced
• 1 orange, zest and juice
• 1 lemon, zest and juice
• 1/2 cup water
• 1/2 cup chopped parsley
• Salt and pepper
