- 90–120 ml/6–8 tbsp jam
- oil, for greasing
- icing (confectioners’) sugar, for dusting (optional)
- 15 ml/1 tbsp cold water
- 130 g/4½ oz/scant ⅔ cup sugar
- 500 g/1¼ lb/4½ cups unbleached plain (all-purpose) flour
