Summer Peach-Almond Galettes – Grand Fete

Ingredients

• 3 cups all-purpose flour

• 2 teaspoons Kosher salt
• 1 cup unsalted butter (2 sticks), well chilled
• 2 egg yolks
• 1 teaspoon pure vanilla extract
• 1/2 teaspoon almond extract
• 4-6 tablespoons heavy cream
• 2 tablespoons flour
• 2 tablespoons sugar
• 2 tablespoons butter
• 2 tablespoons sliced almonds
• 2 tablespoons heavy cream, for brushing on crust
• 1 tablespoon coarse sugar for crust topping
• 4-6 ripe peaches, peeled and sliced (or 4 cups sliced)
• 3 tablespoons sugar
• 1 tablespoon cornstarch
