• 1 1/2 cup milk, divided
• 3 tablespoons extra virgin olive oil or vegetable oil, divided
• 1 chicken breast, diced (approximately 1 lb)
• 1 cup onions, chopped
• 1 cup carrots, chopped
• 1/2 cup celery, chopped
• 1 cup frozen peas
• 1/4 tsp ground thyme
• 2 tablespoons all-purpose flour
• 1 cup chicken broth
