Ingredients

  • 12 baby carrots, halved
  • 1 cup Fish Stock*
  • 1 large bulb fennel
  • salt, to taste
  • freshly ground white pepper, to taste
  • ½ cup light olive oil*
  • 600 ml hot Fish Stock
  • 12 sugar snap peas
  • 6 egg yolks
  • 2 cloves garlic
  • 3 tablespoons strained lemon juice
  • 12 salad onions,* halved
  • 3 x 700 g whole snapper, scaled, gutted and filleted, carcasses reserved for Fish Stock*
