Peach Salad with Spinach, Avocado, Onions, and Bacon

Ingredients

• 2 peaches, sliced into half moons ((you can do bite-sized, too))
• 6 slices bacon ((or turkey bacon, if you want))
• 1 small red onion, diced small
• 2 avocados, cut into bite sized pieces
• 1 bag baby spinach
• 3 tbsp olive oil
• 2 tbsp apple cider vinegar
• 2 tsp dijon mustard
• 2 tsp honey
• salt and pepper to taste
• juice of half a lemon
• optional: grilled peaches for garnish
