Ingredients

  • 4 thin slices quality beef top round filets
  • cooking twine
  • salt and pepper
  • Dijon mustard
  • sweet pickle relish
  • 8 slices of bacon, half cooked (save the fat)
  • 1 large Vidalia onion, halved and thinly sliced
  • 3 tbsp butter
  • 1 tsp garlic, minced
  • 1 tsp tomato paste
  • 2 cups beef consume (Campbells or thickened beef stock)
  • 1 tbsp red wine
  • fresh parsley to garnish
