Creamy Hominy Casserole - Mom's | Just A Pinch Recipes
One of mom's Alabama recipes from her grandma . Grandma made it with a roux and mushrooms ,mom used cream of mushroom soup both ways are good.
Ingredients
- 3 tablespoon(s) bacon grease or butter
- 1/4 cup(s) chopped onions
- 1/2 cup(s) diced green bell peppers
- 15 ounce(s) can hominy, drained and rinsed
- 10 ounce(s) can mushroom soup
- 1/2 can(s) (soup can) milk
- 1/2 teaspoon(s) dry mustard
- 1/3 cup(s) black olives, chopped, optional
- s&p - to taste
- 1 cup(s) mild cheddar cheese,shredded
- 1 small can fried onion rings or use crushed potato chips
