• 1 medium yellow onion, diced
• 1/2 lb. assorted mushrooms, roughly chopped
• 1/4 cup (good quality) sherry
• 3 cups vegetable broth
• 2-3 teaspoons salt
• 1 teaspoon ground black pepper
• 1/2 teaspoon dried thyme
• 3/4 cup soaked cashews
• 3/4 cup water
