• 3 pounds of freshly ground chuck, 80% lean

• ੮ੵ੼੷ કંકઁકંકઁ 1 medium red onion, finely chopped
• ੮ੵ੼੷ કંકઁકંકઁ 1 Tbsp. kosher salt
• ੮ੵ੼੷ કંકઁકંકઁ 1 tsp. freshly ground black pepper
• Extra virgin olive oil
• ੮ੵ੼੷ કંકઁકંકઁ 6 large ‘Artisan style’ bakery rolls (about 4″ in diameter), sliced in half

• 6 slices of smoked bacon, cooked and cut in half
