  • 1 small or 1/2 large onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 jalapeno pepper, stems and ribs removed, minced
  • 4 small sweet potatoes, peeled and cubed (about 4 cups)
  • 4 cups chicken broth
  • 1, 14.5 ounce can diced tomatoes
  • 1 tablespoon tomato paste
  • 3/4 cup peanut butter
  • 2 teaspoons smoked paprika (or 1 teaspoon paprika and 1 teaspoon cumin)
  • 1/4 teaspoon cayenne pepper
  • 2 cups packed kale (or other leafy green)
  • Salt and pepper, to taste
