Chinese Chicken Noodle Soup

Ingredients

• 500g chicken mince
• 230g water chestnuts, drained, finely chopped
• 2 garlic cloves, crushed
• 2 tsp ginger, finely grated
• 1 tbsp oyster sauce
• ½ cup coriander, finely chopped
• 2 tsp sesame oil
• 8 cups chicken stock
• 2 tbsp light soy sauce
• 2 tbsp Shaoxing wine
• 1 cinnamon stick
• 2 star anise
• 2 tbsp raw sugar
• 4 black peppercorns
• 2 strips orange rind
• 180g soba noodles
• 1 carrot, cut into matchsticks
• 1 bunch baby bok choy, cut lengthways
• spring onions, chopped, to serve
• coriander leaves, to serve
• sambal oelek (red chilli paste), to serve
