Ingredients

• 6 fresh corn on the cob or 4 cups frozen corn
• 8 oz crumbled cotija cheese
• juice of 1 lime
• 3 minced garlic cloves
• 1/4 cup mayonnaise
• 1/4 tsp cayenne pepper
• 1/4 tsp smoked paprika
• 1/2 cup finely chopped cilantro
• 1/2 tsp sea salt
• 1 tbsp olive oil
• 1/2 seeded and diced jalapeno
• 1/4 tsp chili powder
