Ingredients

• 3⁄4 cup unsalted butter, melted and cooled to room temperature
• 1 1⁄4 cups packed demerara or dark brown sugar
• 1⁄4 cup fancy molasses
• 1 large egg
• 1 large egg yolk
• 2 1⁄4 cups all-purpose flour
• 2 tbsp ground ginger
• 2 tsp baking soda
• 1 tsp cinnamon
• 1⁄2 tsp fine sea salt
• 1⁄2 tsp freshly ground black pepper
• Granulated sugar, for rolling
