Spun Sugar Pile from The Birthday Cake Book by Fiona Cairns
A nest of very finely spun sugar on top of a cake is a real showstopper. Once mastered, it is a relatively quick, easy and inexpensive way to decorate a cake. H
Ingredients
- 85 g unsalted butter, softened, plus more for the tins
- 1½ x Liquorice Caramel Buttercream recipe
- 2 eggs, lightly beaten
- seeds of 1 vanilla pod, or 1 tsp vanilla extract
- 225 g caster sugar
- 30 g liquorice (I used 22 x 6.5cm lengths of soft, sweet Australian liquorice), roughly chopped
- 100 ml whole milk
- 140 g golden caster sugar
- 1 tsp bicarbonate of soda
- 175 g self-raising flour
- 200 g dates, pitted and chopped
