Ingredients

  • 85 g unsalted butter, softened, plus more for the tins
  • 1½ x Liquorice Caramel Buttercream recipe
  • 2 eggs, lightly beaten
  • seeds of 1 vanilla pod, or 1 tsp vanilla extract
  • 225 g caster sugar
  • 30 g liquorice (I used 22 x 6.5cm lengths of soft, sweet Australian liquorice), roughly chopped
  • 100 ml whole milk
  • 140 g golden caster sugar
  • 1 tsp bicarbonate of soda
  • 175 g self-raising flour
  • 200 g dates, pitted and chopped
