• ½ white cabbage, finely sliced
• ¼ red cabbage, finely sliced
• 1 red onion, finely sliced
• 1 large carrot, grated
• 1 red pepper, diced
• 2 spring onions, roughly chopped
• 2 tablespoons of Gran Luchito Chipotle Paste
• 4 tablespoons of Mayo
• 3 tablespoons apple cider vinegar
• 2 tablespoons extra virgin olive oil
• 1 tablespoon Gran Luchito Spicy Taco Seasononing
• 1 handful of fresh coriander roughly chopped
• Salt and freshly ground black pepper
