• 3 (8 ounce) cans of crescent roll dough
• 1/2 cup butter, completely softened
• 1/4 cup granulated sugar
• 1 teaspoon ground cinnamon
• 1/2 teaspoon ground nutmeg
• 1/8 teaspoon ground ginger
• 1 cup plus 1 tablespoon finely shredded carrot, divided
• 3/4 cup finely chopped walnuts
• 4 ounces cream cheese, softened
• 1 cup powdered sugar
• 1/4 teaspoon vanilla extract
• 1/4 cup coarsely chopped walnuts, for garnishing
