Sour Cream Rhubarb Squares - CSA|365

Ingredients

• For the Topping
• 1/2 cup sugar
• 1/2 cup chopped nuts (I used pecans and walnuts)
• 1 tablespoon melted butter
• 1 teaspoon cinnamon
• For the squares
• 1 1/2 cups packed brown sugar
• 6 tablespoons coconut oil (solid, not melted) or 1/2 cup butter
• 1 egg
• 2 cups of flour
• 2 generous cups rhubarb, cut into 1/2 inch pieces
• 1 cup sour cream
• 1 tsp baking soda
• 1/2 tsp salt
