- 1kg fresh mussels , cleaned and de-bearded (Discard any mussels that don't close after being washed and cleaned!!)
- 2tbsp olive oil
- 1 red onion finely chopped
- 1 white onion finely chopped
- 1 fresh red chilli finely chopped
- 2 tsp Steenbergs Organic Chermoula
- 100 ml fish stock or white wine
- 50g butter
- 1 Bunch of coriander, roughly chopped
