Parker House Rolls

Ingredients

• 1 ¼ cup milk
• 1 envelope active dry yeast (about 2 ½ teaspoons)
• 3 tablespoons unsalted butter
• 3 tablespoons sugar
• 1 ½ tsp kosher salt
• 1 egg, plus 1 yolk
• 3-4 cups unbleached all-purpose flour, plus more for rolling dough
• 5 tablespoons unsalted butter for shaping the rolls
• 1 egg white (optional)
• 1 teaspoon kosher or sea salt (optional)
