  • 1 pound beef stew meat
  • 1 1/2 cups onion, chopped
  • 1 heaping tablespoon coarse salt
  • 1/2 teaspoon pepper
  • 8 cups water, divided
  • 1 1/2 cups celery, sliced
  • 1 1/2 cups carrots, chopped
  • 1 1/2 cups cabbage or coleslaw mix, shredded
  • 2-2 1/2 pounds potatoes, chopped
  • 2 (8-ounce) cans diced tomatoes
  • 1 1/2 cups frozen cut green beans
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce
  • 1/2 tablespoon soy sauce
  • oyster crackers, to taste, for serving
