Ingredients

• ¼ c olive oil
• 1 ¼ lb beef tenderloin cut into 2x ½ “ strips
• 24 tbsp butter
• 1 small onion finely chopped
• 1 tbsp sweet paprika
• 1c thinly sliced mushrooms
• 2 tbsp white wine vinegar
• 3 tbsp Brandy
• 1c chicken stock, preferably homemade free ranged chicken stock
• ¾ c sour cream
