- 8 baby artichokes
- 1 lemon
- 50 ml white wine vinegar. White balsamic or sweet muscat are perfect - if a little extravagant
- 6 very large spring onions
- 100 ml olive oil
- 500 g broad beans (in the pod)
- 300 g garden peas (in the pod)
- 100 ml white wine
- 400 g green asparagus
- 15 mint leaves
- ½ Preserved lemon - finely chopped
- 3 tbsp Agrodolce sauce (two parts vinegar to one part sugar (by volume) reduced by half
