Easter Chocolate Carrot Cake

Ingredients

• CAKE:
• 1/4 tsp sea salt
• 300 g carrots, grated
• 105 g walnuts, chopped
• 50 ml cognac or brandy
• 180 g Lindt EXCELLENCE 70% dark chocolate, in chunks
• 120 g Lindt EXCELLENCE Milk Chocolate, in chunks
• 315 ml Macadamia nut oil or vegetable oil, divided
• 3 eggs
• 270 g icing sugar
• 365 g all-purpose flour, sifted
• 1 1/2 tsp baking soda
• 1 1/2 tsp ground cinnamon
• ICING:
• 500 g Cream cheese, softened
• 45 mL Lemon juice
• 1 tbsp Lemon zest, finely grated
• 12 White chocolate LINDOR truffles, melted
• roasted mixed nuts, chocolate curls or icing sugar, for garnish
