• 2 chicken drumsticks and 2 chicken thighs, on the bone, skinned
• 1 white onion, chopped
• 1 inch ginger, sliced
• 1 cinnamon stick
• 1 star anise
• 1 celery stick, chopped
• 1 medium carrot, diced
• 1 small potato, diced
• a handful of coriander leaves
• 2 shallots, sliced
• 2 tablespoons olive oil
• 3 pints of water
• salt and pepper to taste
• 50 grams rice noodles, split into small pieces
