• 1 tbsp olive oil
• 1 large onion, thinly sliced
• 1 red pepper diced
• 1 green pepper diced
• 2 garlic cloves, finely chopped
• 1 tsp smoked paprika
• ½ tsp cumin seeds
• 14.5oz can chopped tomatoes
• 14.5oz can black beans
• ½ small bunch fresh cilantro, roughly chopped
• ½ small bunch fresh flat leaf parsley, roughly chopped
• 4 free-range eggs
