- 3-4 ounces thinly sliced red or sweet white onion
- u00bc cup extra virgin olive oil (plus more as needed)
- u00bd bunch (about 2 u00bd ounces) fresh, Italian, flat-leafed parsley
- u00bc cup good quality, white wine vinegar
- 2 tablespoons (1 u00bd ounces) golden raisins (u2018sultanasu2019)
- 1 teaspoon capers, rinsed
- Kosher salt and fresh ground pepper
- Pasta option:
- 12 ounces of your favorite dried pasta or 1-pound fresh pasta (I cooked potato gnocchi.)
- Extra virgin olive oil
- 4-5 ounces fresh mozzarella, cubed
- 2 ounces grated parmesan cheese
