- 2 sheets flaky pastry
- 2 medium onions, diced
- 2 tablespoons cooking oil
- 1 teaspoon fennel seeds (omit if using pork and fennel sausages)
- 5 sage leaves, chopped
- 500 grams good-quality pork sausages
- small handful parsley, chopped
- 1/2 teaspoon sea salt
- black pepper
- 2 large eggs, beaten with a fork
- 1/4 cup fresh breadcrumbs
- 1 tablespoon milk
