Citrus Olive Oil Cake Recipe

Ingredients

• Olive oil (for the pan)
• 1 cup sugar, plus 2-3 tablespoons for the pan
• 2 cups all-purpose flour
• 1 1/2 teaspoons baking powder
• 1/2 teaspoon salt
• 2 tablespoons finely grated orange zest
• 1 tablespoon finely grated lemon zest
• 3 large eggs
• 2/3 cup Filippo Berio Organic Extra Virgin Olive Oil
• 1/2 cup sweet sherry or other sweet wine such as Moscato or Beaumes de Venise
• 1 medium orange such as navel, cut into 1/8-inch thick rounds
• 1 cup sugar
• 2/3 cup water
• 2 tablespoons lemon juice
• 1 tablespoon chopped pistachios
• Powdered sugar, optional topping
