Asian-style slaw with crispy shallots

Ingredients

• 1 echalion
• 2 tbsp vegetable oil
• 1/2 white cabbage
• 1/4 red cabbage
• 1 carrot, peeled
• 1 red pepper thinly sliced
• 6 sliced spring onions
• 2 handfuls of edamame
• Small bunch of coriander, coarsely chopped
• Handful of roasted peanuts
• 2 teaspoons sesame seeds
• 2 tbsp rice vinegar
• 2 tbsp honey
• 2 tbsp soy sauce
• 1 tbsp smooth peanut butter
• Juice of 1 lime
• 1 tbsp minced fresh ginger
