Ingredients
- 2 pounds stew meat cut into 1-inch cubes (or 2 pounds beef chuck, trimmed of fat and cut into cubes)
- ¼ cup all-purpose flour
- ¼ cup canola oil
- 1 yellow onion, chopped
- 2 leeks, white part only, cleaned and sliced
- 3 garlic cloves, finely chopped
- 1 bottle Guinness Extra Stout
- 4 cups beef stock
- 2 bay leaves
- 2 teaspoons dried thyme (or one tablespoon fresh)
- 3 carrots, cut in 1-inch pieces
- 2 parsnips, cut in 1-inch pieces
- 1 rutabaga, cut into 1-inch pieces
- 2 small turnips, cut into 1-inch pieces
- 1 pound boiling potatoes, cut in half if small or in fourths if larger
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown sugar
- ½ cup frozen peas
- Salt and pepper
