Ingredients

  • 2 pounds stew meat cut into 1-inch cubes (or 2 pounds beef chuck, trimmed of fat and cut into cubes)
  • ¼ cup all-purpose flour
  • ¼ cup canola oil
  • 1 yellow onion, chopped
  • 2 leeks, white part only, cleaned and sliced
  • 3 garlic cloves, finely chopped
  • 1 bottle Guinness Extra Stout
  • 4 cups beef stock
  • 2 bay leaves
  • 2 teaspoons dried thyme (or one tablespoon fresh)
  • 3 carrots, cut in 1-inch pieces
  • 2 parsnips, cut in 1-inch pieces
  • 1 rutabaga, cut into 1-inch pieces
  • 2 small turnips, cut into 1-inch pieces
  • 1 pound boiling potatoes, cut in half if small or in fourths if larger
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • ½ cup frozen peas
  • Salt and pepper
