Ingredients

• 5 large eggs
• 2 tablespoons small capers
• 2 tablespoons shallot, minced
• 4 cornichons, finely chopped
• 1 tablespoon whole grain mustard
• 2 tablespoon white wine vinegar
• 1/2 cup extra virgin olive oil
• Kosher salt and freshly ground black pepper
• 3 tablespoon chopped mix of fresh flat-leaf parsley, chervil, chives, tarragon
• 2 pounds fresh white asparagus, end removed
