spicy red bell pepper vodka rigatoni

Ingredients

• 1 lb of Rigatoni
• 2 tbsp of extra virgin olive oil
• 1 small jar or 1/2 a large jar of roasted red peppers
• 1 white onion, peeled and finely diced
• 3 cloves of garlic, peeled and finely diced
• 1/3 cup of vodka
• 2 tbsp of Calabrian chilli paste
• 1/2 cup of mascarpone
• flaky salt
• basil (for serving)
• grated parmesan for serving
