Potatoes with Yellow Pepper and Artichokes - CookingHub

Ingredients

• 2 LB of potatoes of your choice (I prefer russet potatoes, but any kind will work.)
• ½ cup of artichokes - canned, drained and finely chopped (*)
• ½ yellow bell pepper - finely chopped
• 2 TBSP of unsalted butter
• Drizzle of olive oil
• ½ TSP of salt
• Pinch of pepper - ideally freshly ground
• 1x Measuring Cups
• 1x Measuring Spoons
• 1x Chef’s knife
• 1x Cutting Board
• 1x Peeler
• 1x Medium Sauce Pan or Small Pot (4QT)
• 1x Colander
• 1x Silicone Spatula
