• 2 cup sodium-reduced stock ( (I used beef))
• 1 cup milk ((use whatever you have on hand))
• 2 tbsp all purpose flour
• 1/2 tsp (dried) thyme
• 1 tsp dijon mustard
• 1 cup grated old cheddar cheese (, divided)
• 1/2 tsp salt (, plus more)
• 1/4 tsp pepper (, plus more)
• 1 Bunch broccoli (, florets only)
