A festive, vegan version of the traditional German Stollen cake, packed with mixed dried fruit and a marzipan surprise in the centre.
Ingredients
- 250 ml Almond milk, lukewarm
- 2 tsp Dried active yeast
- 500 g Plain flour
- 50 g Caster sugar
- 1 Lemon, zested
- 1 tsp Ground cinnamon
- 0.5 tsp Ground nutmeg
- 75 g Vegan spread, melted
- 200 g Mixed dried fruit
- 2 tbsp Rum
- 200 g Vegan marzipan
- 1 tbsp Icing sugar, for dusting
