- 40 g orange marmalade
- 220 ml vegetable oil
- 100 g finely grated fresh ginger
- 220 ml boiling water
- 1/2 teaspoon baking soda
- 130 g plain wholemeal flour
- 190 g plain flour
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon mixed spice
- 1 tablespoon ground ginger
- 1/2 teaspoon salt
- 2 eggs (beaten)
- 1/2 cup icing sugar
- 1-2 tablespoons lemon juice
